Thanksgiving day was spent with some wonderful friends. And yes they were all raw vegans. I met some new aspiring fruitarians. Everybody was wonderful and had great stories to share on their path of health. We all brought low fat raw vegan dishes. And of course I forgot to take pictures. But here is what was on the menu:
angel hair zuke pasta
fruit bowl (mango, pineapple, celery, grape toms)
fruit bowl, (can't remember the fruit but it did have pomergranate yum!)
squash soup (oh this was great! I can't remember the exact ingredients. Someome help me remember! I swear I will get you the recipe.
cole slaw
cranberries, oj and dates blended (soooo good, and i put it on top of my slaw, wow!)
and the BEST recipe BY FAR was
pumpkin pudding, but it didn't have any pumpkin in it. It had persimmons, dates and a dash of pumpkin spice. I kid you not it tasted exactly like pumpkin pie. It was a total hit. Some people put the pudding on top of their banana ice cream.
If you want to try this recipe here is the ratio that was used
7 persimmons, 8 dates, 1/8th of a teaspoon of pumpkin spice (or add more and go by taste but start with small amounts first).
So guess what I am getting my next fruit order, dates and persimmons. I don't ever hardly buy dates. I tend to only eat them racing. I am also getting bananas too. Haven't had any in a long time. I can't remember my last banana meal. I have been so fortunate to get really great juicy fruits which I prefer over bananas and dates.
My staple will be in the next few weeks, persimmons, kiwis (lots!), dates, bananas, honeycrisp apples, and oranges for oj. I am getting to the point where oj is a staple for breakfast. It has to be the most perfect breakfast ever created. I don't know about others but mornings I don't have a huge appetite (well at least not right now, just wait until my mileage starts going up) so juice is perfect for me. I like to drink about 50oz of oj before a workout. My biggest appetite comes at lunch and dinner.
